Ho Loi Pho restaurant is currently operated by Ms. Ho Thi Mai Hoa (44 years old, Hanoi). The store was first opened in 1987 by her father and was named after him. Ms. Hoa said that Mr. Loi learned the noodle profession from his uncle, Ho Te, the owner of the famous Phu Xuan noodle shop at 36 Hang Da. From 1987 to 1988, he started selling beef noodles at Phu Thuong market. After a period of break, the shop was reopened in 1997 and by 2001, she was handed over to her mother.
However, from then until 2010, the number of visitors has decreased significantly. When she saw that her family had difficulties and there was a crowded noodle shop next to her. She decided to ask for the formula from her father to continue her business. 3 Attractive flavor of Pho Ho Loi

Bones are soaked for 4-5 hours with ginger, lemon and salt, then washed and blanched through boiling water mixed with wine and ginger to deodorize. Finally, the bones were simmered for 18 hours.

The beef is imported from a familiar facility, while beef ribs and cow core are searched from the famous countryside with quality cows. The shop serves many different types of pho such as re -, ripe, encrusted, bucket, wine sauce, stir -fried and core pho. The price of each bowl of pho ranges from 40,000 to 70,000 VND, all are clearly listed at the shop for customers to easily choose. The shop sells for about 5 hours every morning, from 6am to 11pm, or until the water runs out.
The rib noodle dish has been introduced by Ms. Hoa for more than a year. Initially, she only bought beef ribs to simmer the broth, but when she realized that the rib meat was very fragrant and easy to eat, she decided to develop a new dish. Every day, she imported 30kg of beef ribs, washing and preliminating to simmer. The ribs are ripe 80% from the previous night and continue to simmer in the pot of broth on the next morning, the total time is 3 hours to ensure softness and richness. Each bowl of rib noodles costs 50,000 VND.

Previously, Ms. Hoa made her own beef, encrusted and bucket, but now due to the large number of visitors and families have switched to using the sliced machine. The beef was re -ordered from a nearby meat shop to ensure freshness: “Where to sell, call it,” she said.
Inheriting the meticulous cooking from her father, Ms. Hoa chose a small, flexible and chewy noodles, capable of absorbing broth. If the noodles did not meet the requirements, she absolutely did not accept. For her, Pho is not only a source of life of her family but also her father’s enthusiasm.

4 What do customers say about Pho Ho Loi
According to diners, the noodle shop stands out with concentrated broth from bones, few main noodles, no unpleasant odor or strong smell of fish sauce and herbs. Pho bowl is always full, fresh meat, small noodles, flexible and has just cooked. The owner and the service staff are agile and welcoming.
The broth here is opaque, slightly fat and rich. Pho bowl is also considered a lot of meat. The owner and the owner of the shop are very friendly and always listen to the opinions of customers.
