According to the owner, about 80% of orders at Bun Bo Hue 14B are for take-out because the restaurant is quite small, with only enough space for cooking and preparing 1-2 tables for customers to eat on the spot. Michelin Guide also commented on the beef noodle dish here: “This take-out-only restaurant specializes in serving noodles with sliced beef and beef tendons. The broth is made from onions, beef and pork bones and is very rich. Diners can add bean sprouts, chili, lemon and fish sauce to your taste.”
The owner also modestly commented that his restaurant is just like many other beef noodle shops, so he was very surprised when the dish was highly appreciated by Michelin’s judges. Revealing the secret to the dish’s success, Mr. Chau said that it could be due to the rich broth with fresh ingredients prepared daily to ensure quality.
