The owner of the shop is Mrs. Nguyen Thuy Cham, who is 58 years old, is from Hanoi. Every day, she woke up from 3 am to prepare raw materials. Despite having been in business for more than 20 years, she did not accept her noodle shop, because according to her, the “heirloom” was not the deciding factor for the delicious pho. “Sales is charm. Just dedicated and guaranteed the quality of food, customers will come and come back, ”she shared.

The secret to retaining Mrs. Cham’s customers lies in the use of natural ingredients and not using main noodles. Customers who eat at the restaurant often see her directly processed, only add a little white salt to increase the flavor. Even relatives and daughter in the family do not know what she prepared specifically, so whenever she was busy, the shop was forced to take a break from selling.

Since the start of business, Ms. Cham has always focused on the quality of raw materials and food safety. According to Vietnamtravelio, although many people judge that the price of pho here is high, but in fact, patrons are still very crowded and often come back, even families have eaten here for 4 generations. The shop always chooses a clear origin, ensures hygiene and absolutely does not use harmful additives to health. From chicken, noodles to each lemon, chili, bars are carefully selected from reputable suppliers.

The owner also emphasized: “I cook for guests the same way I cook for my family. For more than 30 years of selling pho, I eat chicken noodles every day, even one day ate 2-3 bowls. My employees also eat pho every day. ”

Every day, she directly preliminarily processed chickens and used the bone to cook broth. The broth is simmered for about 7 hours and herbs. With more than 30 years of experience, just looking at the skin color, she can know the chicken is ripe in the right level. Chicken is thick, not crushed, firm meat, crispy yellow skin.

The shop uses sliced noodles to make the cake softer than the machine, but this cake is easy to be crushed and no preservatives, only to be at a normal temperature of about 4 hours. Whenever the cake is almost out of the cake, Mrs. Cham will call the facility to get more delivery. To store on hot days, the counter area is equipped with air conditioning and cooling fans.

Some argue that the price of 100,000 – 150,000 VND/bowl, 3-4 times higher than the average price of 30,000 – 35,000 VND, made many people wonder.

Most diners are patrons, office workers and civil servants around the area. Some patrons of the chicken noodle shop love the fragrant herb and the chicken here firmly, sweet, rich, and evaluate that the price is absolutely worthy of the quality. Another customer expressed: “Many people often read the article that criticizes the price and then hastily evaluated, even though they have never tried it. Cuisine is a personal hobby, if it feels delicious, worth the money, it is also reasonable to spend a few hundred thousand pho. ”

A patron commented that: Pho flavor here is very difficult to find elsewhere. Expensive or cheap depending on the perception of each person, but for the patrons here, the price is worthy. Chicken meat, fragrant broth, lemon leaves are very suitable.
